Anthocyanin is a natural pigment found widely in nature from edible fruits and vegetables such as grape, elderberry, red radish, red cabbage, blackcurrant, and black carrot. The color is pH dependent, orange-red in acid solutions and violet-blue in alkaline. The product is most commonly used for coloring of beverages, fruit preparations, confectionery and ice cream.
